With elderflower in abundance at the moment, it’s the perfect time to make our really simple summer cordial – perfect for little ones to join in! The school children who have visited the farm this week all enjoyed the process of making their very own elderflower cordial by picking elderflower heads, squeezing and zesting lemons then tasting the finished refreshment.
Ingredients
- 15 heads elderflower (remove chunky stalks)
- 500g caster sugar
- 2 large tablespoons of local honey
- 2 lemons
- 1-litre boiling water
Method
- Add water to a pan, melt in sugar and honey
- Once melted, add zest and juice of 1 and a half of lemons
- Then chop the other half lemon, add to water with elderflower heads
- Store in the fridge overnight
- The following day, strain and serve with your favourite mixer and keep in the fridge between uses
