Chef Line Up

Team Nancarrow

Lead by Jackson Bristow, our kitchen team split their time between the farm, the kitchen garden, butchery and the larder, delivering year-round farm focussed feasts and dinners. They share a passion for provenance and sharing absolutely everything produced on this farm with our visitors.

At 1000 Mouths, you’ll find Jack and the team hosting feasts on Friday and Saturday, serving streetfood lunches on Sunday, and butchery demos in between.

Paul Ainsworth

No.6 Padstow

Friday 4th October

We’re delighted to welcome Paul Ainsworth to the farm to kick off our 1000 Mouths festival this year! A passionate supporter of local farmers, fishermen and artisanal producers, Paul’s fun and intensive cooking earned his Padstow restaurant Paul Ainsworth At No.6 a Michelin star in 2013, and in 2016 he was awarded a fourth rosette by the AA. In this year’s National Restaurant Awards No.6 was ranked the 16th best restaurant in the country. For a truly special evening that needs no introduction, Paul will be hosting an intimate Friday night dinner in the Old Mill.

Adam Banks

Fifteen

Friday 4th October

Appearing at our inaugural 2017 event, we’re delighted to to welcome Adam and the Fifteen Cornwall team back to 1000 Mouths. Fifteen offers a unique blend of exceptional food, dedicated service and an inspiring commitment to make a difference in young people’s lives. Adam and his team will be hosting a Italian inspired Harvest Feast in the Rusty Barn. Expect bold, bright, autumnal Italian dishes packed full of flavour and served with a Cornish twist.

Dan Cox

Crocadon

Saturday 5th October

After cooking at the highest level for Simon Rogan at L’Enclume in Cumbria and Fera at Claridge’s, Dan relocated to Cornwall and Crocadon, a 120-acre organic farm near St Mellion, where he plans to open his restaurant. Dan joined Aulis, Simon Rogan’s research kitchen in 2011 where he built and ran a farm in the Cartmel Valley. Here he witnessed first-hand the benefits of nurturing produce from seed to plate. His latest venture is hotly anticipated and we’re thrilled to be able to welcome Dan to the farm where he’ll be hosting an intimate dinner on Saturday in the Old Mill.

Ben Tish

Saturday 5th October

Appearing at our inaugural 2017 event, we’re thrilled to welcome Ben back to 1000 Mouths. Heading up the feast in our Oak Barn on Saturday evening, Ben’s menu will focus on the flavours and cuisine of the Southern Mediterranean. Inspired by the area’s food culture, his just-launched book Moorish is already a firm favourite in the Nancarrow kitchen! And with Norma – his new Sicilian-Moorish-influenced restaurant – opening on London’s Charlotte Street in September, 2019 is shaping up to be a busy year for Ben. We’re very lucky and excited to have him joining us.

James Whetlor

Cabrito

Saturday 5th October

Launching ‘Goatober’ at 1000 Months, Cabrito’s James Whetlor will be joining us on Saturday to serve up some delicious street food during the day and canapés in the evening. James is a consultant for the European Food Heroes project, which aims to end food waste in farming across the EU. This is something very close to our hearts, so we’re thrilled to have him cooking with us.

Tom Griffiths

Flank

Sunday 6th October

Tom’s ethos of seasonal, local, nose-to-tail cookery is everything we strive for at Nancarrow, so we’re incredibly excited to have him joining us. Tom will be here on Sunday to serve up his modern take on simple, local produce – prepared over fire using our organic Red Devon beef. Owner and chef director of Flank at the Old Spitalfields market in London, Tom’s key message is that sustainable cooking is the only way we can eat quality beef in the future, and we couldn’t agree with him more.

Beautiful & The Feast

Friday 4th & Saturday 5th October

We’re delighted to welcome back the incredible team from Beautiful & The Feast. Based in Bude for the last 5 years but popping up at events all over Cornwall, Will, Keda and their team – alongside their community of dedicated small holders and organic farmers – aim to change the status quo with regards to mass production, archaic waste solutions and boring food. These guys are very special, and the good news is they’re cooking you canapes on Friday night, and streetfood on Saturday.

Temple

Saturday 5th October

Temple is a small but beautiful restaurant in Bude, north Cornwall. Head chef Craig Tregonning, formally head chef at Ottolenghi, run’s what they describe as ‘a neighbourhood joint’ with glorious flavours, meticulous detail, and the most perfect service. They also run Temple Takeovers – inviting guest chefs and old acquaintances from all over the world to their humble kitchen. At this year’s 1000 Mouths they’re collaborating with Ben Tish on what is going to be an incredible menu.
